petite sirah (PS)
PS is a grape variety with high astringency and good acidity. Its ability for long storage/aging is equivalent to the Cabernet Sauvignon grape family. PS produces dark and deep purple wines with flavors of black pepper, raspberries, blueberries, spices and licorice. pairing: suitable for European dishes such as beefsteak, lamb; or Asian dishes such as crispy roasted pork and char siu.
cabernet sauvignon (CS)
CS is a wine grape variety with deep color, excellent tannin structure, moderate high acidity and aromas of blackcurrants, plums, warm spices and cedar. Wine has the ability to be stored for a long time. pairing: suitable for European dishes such as beefsteak, lamb; or smoky Asian dishes such as glazed roasted meat, glazed grilled pork, and bun cha.
concord (CC)

ZI is a grape variety with high alcohol and good acidity, deep sweetness and moderate low astringency. pinot noir (PN)
PN is a grape variety with low alcohol content and very good acidity, slight sweetness and smooth tannins.
